- 50 g almond flour
- 50 g granulated sugar (plus 1 tablespoon for sprinkling on top)
- 20 g butter (melted, plus extra to grease the baking dish)
- 5 g salt (a generous pinch)
- 33 cl milk (approx. 1 ⅓ cups)
- 4 large eggs
- 1 dash vanilla extract
- 200 g red fruits / berries (fresh or frozen raspberries, blueberries, blackberries, strawberries)
- (Optional) A dash of dark rum to taste
Step-by-Step Instructions
Prep the Oven & Cake Tin
- Preheat your oven to 180°C (350°F), static heat.
- Butter your cake tin or baking dish.
- Spread the red berries evenly across the bottom of the dish.
Melt the Butter
- Place the 20 g of butter in a microwave-safe ramekin and melt it for about 30 seconds in the microwave. Set aside to cool slightly.
Mix the Dry Ingredients
- In a large mixing bowl, whisk together the flour, almond flour, sugar, and salt.
Incorporate the Eggs
- Crack the 4 eggs into the dry mixture.
- Whisk thoroughly until smooth and completely incorporated.
Add Butter and Milk
- Pour in the melted butter and whisk well.
- Gradually add the 33 cl of milk little by little while continuously whisking to avoid lumps and obtain a smooth, crepe-like batter.
Flavor to Taste
- Stir in a dash of vanilla extract.
- (Optional) Add a splash of rum if you like an extra aromatic touch.
Bake
- Pour the batter over the red berries in the buttered dish.
- Bake at 180°C for 35 minutes. The clafoutis is done when it is puffed up, set in the center, and lightly golden brown on top.
The Finishing Touch
- Remove the clafoutis from the oven.
- Immediately sprinkle a spoonful of sugar over the warm surface for a delicate sweet crust.
